This lively bowl of satisfying Cuban-style black bean soup is thick, has a splash of vinegar, is served with white rice and is typically made with smoked ham. This version gets its smoky flavor from smoked paprika instead of traditional ham hocks and remains meatless. To save time, a portion of the sofrito is reserved to use as a fresh, colorful garnish. About ½ cup rice is ideal per bowl.
