Mason Jar Vegetable Soups
Assemble these veggie-packed soups over the weekend for an easy week of wholesome microwaveable lunches!
1/3 cup precooked Starch
1 cup Vegetables, any combination
1/2 cup chopped, packed Leafy Greens
Seasonings, to taste
1 cup College Inn® Chicken or Garden Vegetable Broth
Layer the Starch, Vegetable(s), Leafy Green and Seasoning(s) ingredients in a pint-size Mason jar; pour in broth to reach 1 inch from the top. Seal and refrigerate for up to 5 days. Keep refrigerated until ready to heat.
To heat, remove lid and microwave on HIGH 3 1/2 to 4 1/2 minutes until bubbling and vegetables are cooked to desired doneness. Let jar rest in microwave 1 to 2 minutes (the jar will be very hot) then carefully remove with hot pads and pour into a serving bowl. Season to taste with salt and pepper, if desired.
