Banh Mi Sandwich
Day 2 of our planned-over meal is a quick and delicous weeknight dinner. Day 1 is Asian Pot Roast.
3/4 cup shredded carrots
3/4 cup julienned cucumber
1/2 to 1 jalapeno, seeded and thinly sliced
1/2 cup torn fresh cilantro leaves
2 Tbsp. torn fresh mint leaves
2 Tbsp. rice or white vinegar
2 tsp. sugar
1/2 tsp. salt
reserved cooked meat and sauce
baguette or French rolls
Combine vegetables, herbs, vinegar and seasonings in a bowl; mix well.
Thinly slice reserved cooked meat. For a hot sandwich, reheat meat in reserved sauce.
To serve, fill sliced bread with sliced meat and salad.
