White Clam Sauce

Ingredients
- 1 14.5 oz. College Inn® Chicken Broth 99% Fat Free
- 1 cup Del Monte® Diced Tomatoes
- 2 Tbsp. butter
- 1 Tbsp. garlic minced
- 1 cup mushrooms thinly sliced
- 2 14 oz. clams (6.5oz) chopped, drained, liquid reserved
- 3/4 cup clam juice reserved
- 1/4 cup dry white wine
- 1 tsp. parsley dried
- white pepper dash
- salt to taste
- pepper to taste
Directions
In a medium skillet over medium-high heat melt butter or margarine. Add garlic and sauté 30 seconds. Add mushrooms and sauté 1 minute. Pour in broth and remaining ingredients, bring to a boil and simmer 5 minutes. Serve over cooked pasta (linguine, fettuccine, or spaghetti).
** For a thicker sauce, whisk 1 Tbs. flour with 1 Tbs. softened butter, and incorporate into sauce.
Sauce - Serve with cooked pasta
