Tomato Rosemary Sauce

Description

This low-calorie sauce pairs beautifully with chicken or light fish. The bold, snappy flavors are a delicious way to dress up your dinner routine.

Ingredients

  • 1 14.5 oz. College Inn® Chicken Broth 99% Fat Free
  • 1/2 cup Del Monte® Diced Tomatoes
  • 1/2 cup white wine
  • 1/2 tsp. sugar
  • 1 tsp. rosemary
  • 1/2 cup heavy cream
  • 1 Tbsp. green onions sliced

Directions

Heat a medium-size skillet over medium-high heat. Add white wine and bring to a boil, simmer 5 minutes until reduced. Add in broth, diced tomatoes, sugar, rosemary, and green onions, bring to a boil and simmer 10 minutes to reduce. Add in heavy cream and bring to a boil, continue to simmer 5 – 10 minutes longer until reduced to desired thickness.

Sauce: Serve over baked or grilled chicken breasts, cod, tilapia, or orange roughy.
