Greek Chicken and Orzo

Ingredients

  • 2 14.5 oz. College Inn® Light & Fat Free Chicken Broth 50% Less Sodium
  • 1 cup onions chopped (finely)
  • 3/4 tsp. oregano
  • 2 cups orzo
  • 3/4 lb. boneless, skinless chicken breast diced
  • 3 cups spinach
  • 1/2 cup feta cheese

Directions

In a large skillet, heat broth, onion and oregano to a boil. Add orzo; reduce heat. Cover and simmer for 6 minutes, stirring occasionally. Add chicken; cook 6 minutes longer or until chicken and pasta is cooked. Stir in spinach; heat just until spinach wilts. Remove from heat and top with cheese.
