Country-Style Vegetable Soup

Ingredients

  • 1 can College Inn® Chicken Broth 99% Fat Free
  • 2 cups sweet onions diced
  • 1-1/2 cups carrots diced
  • 1 cup celery diced
  • 2 cups russet potatoes peeled & diced
  • 3 Tbsp. parsley

Directions

1. In large heavy pot, over medium-high heat, cook and stir onions, carrots and celery in 1/2 cup broth for 5 minutes.
2. Add remaining chicken broth and potatoes; heat to a boil. Reduce heat; simmer for 20 to 25 minutes or until potatoes are tender. Add parsley if desired.

Variation: For a pureed version; blend in electric blender until smooth.
