Corn and Pepper Fish Chowder

Ingredients

  • 1 can College Inn® Turkey Broth
  • 2 bacon (strips) diced
  • 1 cup green bell peppers diced
  • 1/2 cup onions
  • 2 Tbsp. flour
  • 1/4 tsp. thyme
  • 1 cup potatoes peeled & diced
  • 1 14.5 oz. cream corn
  • 1/2 lb. cod, tilapia, salmon, or sea bass fish fillet

Directions

In medium saucepan cook bacon till crisp; remove and set aside. In same pan sauté peppers and onions till tender crisp, 2-3 minutes. Add flour and cook, stirring for 1-2 minutes. Add broth, thyme, potatoes, and corn; cover and simmer 5 minutes. Add fish and continue to simmer for 10 minutes or until fish flakes. Add bacon and serve.
