Beef Barley Vegetable Soup

Ingredients
- 1 can College Inn® Beef Broth 99% Fat Free
- 1 lb. boneless beef sirloin cut into cubes
- 2 Tbsp. vegetable oil divided
- 1 cup onions chopped
- 1 cup carrots chopped
- 1 rutabaga diced (medium)
- 1 bay leaf
- 1/2 tsp. thyme
- 3/4 cup quick-cooking barley
- 1 cup cabbage chopped
Directions
1. In large saucepot or Dutch oven, brown beef in 1 tablespoon oil; remove.
2. Cook onions, carrots and rutabaga in remaining tablespoon oil about 3 to 4 minutes, until tender-crisp, stirring occasionally.
3. Return beef to pot; add broth, bay leaf and thyme. Cover; simmer 25 minutes, or until beef is tender.
4. Stir in barley and cabbage. Cook 10 to 12 minutes, until barley is cooked.
